Feel free to substitute your favorite grain for the quinoa.    This pic pairs this salad with my POWER toast ( with avocado) for a very hearty meal!

For the quinoa mixture:

1 cup quinoa (cooked according to package directions)

1/2 cup pumpkin seeds, toasted

1 small bunch of kale, tough ribs removed and chopped roughly into small pieces

sea salt

1 can of black beans

1/2 cup thinly sliced scallions

1/2 cup lightly packed cilantro

1/2 cup rinsed oil packed sun-dried tomatoes, rinsed and chopped

1-2 jalapenos, chopped with seeds & membrane removed

For the dressing:

1/4 cup olive oil

3-4 T of fresh lime juice

3/4 tsp cumin

1/2 tsp sea salt

Method:

1.) place the shopped kale in a large bowl.  sprinkle it lightly with the salt and massage it with your hands until it’s darker and more fragrant.  add the cooked quinoa, toasted pumpkin seeds, black beans, scallions, cilantro, sun-dried tomatoes and jalapenos.

2.) combine the dressing ingredients in another small bowl. whisk until blended. pour over the salad and mix well.   let rest 15 minutes before serving.
